This course is designed for individuals who want to know the basics of ice cream making without the technicalities. Participants will make and compare ice cream with different fat contents during the practical session. Participants will be equipped with knowledge of the functions of the common ingredients used in ice cream and can apply the knowledge learnt in the workshop to make ice cream at home. During the workshop, participants will have a hands-on ice cream-making experience and will have a short lecture on the different types of frozen desserts, the functions of common ice cream ingredients and the manufacturing process.

Lin Liang
Lin Liang has over 10 years of experience as a lecturer in the Diploma in Food Science & Nutrition in Nanyang Polytechnic. She has guided several final year project students in the development of award winning dairy products such as Traffic Jam Ice Cream which is a diabetic-friendly ice cream made of 3 different vegetable flavours. She enjoys teaching on ice cream as it is one of her favourite foods.
