Ingredients: Serves 3 pax
250g of sliced fish (Toman fish)
1/2 tsp of salt
1/3 cup of water
2 tbsps of cornflour
Fried hor fun
500g of rice noodles (Hor Fun)
2 tbsps of light soy sauce
A few slices of ginger
4 cloves of chopped garlic
180g of bean sprouts (Head & tail removed)
1L of water (or chicken stock)
2 tbsps of concentrated chicken stock (omit this if you’re using chicken stock instead of water)
1/2 tsp of sugar
2 tbsps of light soy sauce (add more to taste if necessary)
A few dashes of white pepper
2 stalks of spring onion
Some cornstarch solution
