Sweet and Sour Golden Spare Ribs

(serves 4)


  • 600g spare ribs
  • 1.5kg water
  • 200g cabbage seedling(blanch and drain)
  • 1tbsp starch


  • 30g sweet and sour sauce
  • 20g light soy sauce
  • 20g Huadiao cooking wine
  • 30g ketchup
  • 20g hoisin sauce
  • 20g fermented bean paste
  • 1/2tsp red yeast rice
  • 1/4tsp chicken powder
  • 2 amomum tsaoko
  • 2 bay leaf
  • 2 pcs star anise
  • 1 cinnamon15g rock sugar


1.Heat oil. Fry spare rib until golden. Remove and drain.

2. Add fried rib into a pot. Add water and all Seasoning to cook over high heat for 30mins. Lower the heat and continue cooking for 1hr15mins.

3. Place spare rib into a plate. Dress with cabbage seedlings.

4. Filter the gravy and bring to a boil. Add starch to thicken it. Pour on the spare rib and serve.
